Recipe Review: Banging Grilled Shrimp Skewers

If you follow me on Pinterest, you know that I love pinning (who doesn’t) and I add a lot of recipes to my life via the site. Recently I pinned a picture of Banging Grilled Shirmp Skewers from SkinnyTaste.com and I received the most comments and repins of any of my pins…ever!

People sure do like the look of that shrimp! But did the taste match? Here’s my review.

First off, it really couldn’t be easier. Secondly, it was delish and everyone loved it.

I started by mixing the four main ingredients: Siracha, Thai Sweet Chile Sauce, Scallions and Light Mayo.

Easy Peasy.

Next, I added a little salt and pepper to the raw shrimp.

Then stuck about 5 shrimp on each skewer, brushed on the sauce and was ready to put them on the grill!

You leave them grilling on each side for about 6-8 minutes and….

Voila!

Yum.

Everyone really like them and even wished I had made extra sauce for dipping. I loved them too though I feel they would go best as a compliemnt to a piece of steak or fish or lobster and rather than its own. Nevertheless, I highly recommend this recipe from Gina over at Skinny Taste!

What Not To Pin, DIY, Buy or Wear. One Woman’s Opinion.

Have you ever seen that show What Not to Wear? Well, neither have I but I’ve heard the title and I can assume the show’s concept is, well, what NOT to wear. I feel similarly towards a lot of Pinners and Internet goers out there. Sometimes I come across an image of something and automatically think, “Oh no. Don’t pin that! Don’t make that! Don’t wear that!”

Sure, you CAN, make an entire floor out of glued pennies…the question is…why on God’s green earth would you want to?

Basically: Just cause you can, doesn’t necessarily mean you should.

Now, I am 100% aware that these are all very very relative/arbitrary judgments/opinions as each person has their own tastes, styles, and opinions. As well they should! And so these are only my opionions…on other people’s styles. To each their own right?

Here are a few of the images I’ve seen that illicit the “really?!?” response in my mind.

Here is said Penny Floor. I mean not only does it look like the most horribly tedious job ever…who thinks this looks cute?

There HAS to be a better way to adorn your chair than with these apples.

I know we all loved the famous 90’s brainteaser toy Rubik’s Cube but is a purse necessary?

If you think this looks cool, I totally agree with you. It is very neat. But would you display it in your home? Aren’t there better ways to showcase photos?

I know flip-flops equal summer but…No. Just…No.

I know funky nails are all the rage these days but where do we draw the line? I thought less was more?

I’m all for being festive but really..again with the nails?

I’m a 90’s kid too, people. I know we used to love these games (we didn’t have ipads) but a rock, paper, scissors necklace? Let’s stick to using those 3 to decide who gets the last slice of pizza, not to wear around our necks.

I just honestly, not sarcastically, don’t understand the need. Aren’t there so many other votive options? And cheap ones too!

We all love Beauty and the Beast and this is super fun and whimsical but I don’t know about spending money on it and having it as a focal point in your house.

I LOVE The Hunger Games. Love. But this necklace…is it necessary?

I hate that its seems I’m hating on these items, even thought I guess I kind of am. These are only my humble opinions and I understand not everyone will share them. I’m sure some people would walk into my house or closet and say, WTF, to a few things of mine!

Imagine if we all like all the same exact things? How boring!

I’m completely aware that my photography skills are horrendous. Promise, I’m working on it.

What do you think? Looks identical right? I’ve never actually seen the J. Crew one in person so I can’t compare the color but by their online picture, the J. Crew one looks more “neon yellow” and this looks more “sunshine Yellow”.  At least to me.

I do love me some sunshine yellow though! It was so hard to decide which color to go with for the necklace but at these prices, I may go back for another one..or two.

If you’re like me, and you don’t care who makes it, as long as its pretty and affordable, then you have to get in on this! I paid $16 including shipping for this $150 necklace.

Wordy Wednesday: The Cure

So, I’m not one for long poetic quotes or the overload of inspirational sayings that bombard the internet on a daily basis. But every once in a while, a quote or saying or wording will come along that makes me stop and reflect, if only for brief moment.

I think its safe to say that depending on what is going on in our lives, a certain quote can appeal to us more than others. Sometimes it’s the inspiration we seek, the push we were looking for, the reminder we needed.  Sometimes its just fun.

I’m going to use Wednesdays to share with you some words that inspire, motivate or catch my attention. Just once a week…I’m not trying to add to the overload.

Weekend Recap: Soaking up the Sun, Full Moon and Nachos

Hi Blog Friends! How was everyone’s weekend? Is it getting hot where you live? It’s getting hot here…really hot. And rainy. Summer= rainy season in South Florida. How about where you are??

Well I hope to pick up my blogging a little bit, so if you’re out there, holla at your girl!

Here’s a little weekend Recap!

This weekend’s Top 5:

1. Food, Friends and Basketball: Friday night we got together with friends to have some drinks, eat some food and watch the Heat vs. Celtics game. Sadly, the Heat lost and the food was crap…but the beer was cold, the company was good and the Tvs were big so all was ok in the world.

2. Mini Getaway: My Mister and I took a little getaway to the Florida Keys. The weather was cloudy Saturday forcing us (allowing us?) to just hang out inside and soak in the AC. Too bad we realized this AFTER I had drenched my body in sunscreen. #super

2. Tuna Nachos: Saturday night, we ventured to a local spot that sells the most amazing Tuna Nachos. You can get there by car or boat! How can a food alone get a spot on the top 5 list? Because they are perfection..that’s why.

4. Full Moon Beach Party: After dinner on Saturday, we headed to the famous Morada Bay Full Moon Beach party. This only happens a few times a year and we were lucky it was going on this weekend. Remember Saturday’s wind that didn’t let us go fishing? Well it worked out beautifully at night as there was a light breeze and a very random mosquito-free night in June.

If you ever get a chance, try to attend one of these Full Moon parties. Bring a blanket like we did and just lay out and listen to the bands playing and watch the performers. Or you can get your drink on and party it up since the music keeps going until about 2 am. Sadly, I don’t have better pictures. My damn iPhone doesn’t work at night it seems.

5. Game of Thrones- The Game of Thrones season 2 finale was on Sunday night! You guys..are you watching this show? Isn’t it so good? The finale didn’t wrap up as many loose ends as I would have liked (it’s like LOST all over again) but I guess that’s what we have season 3 for. Till then, Westeros! I will miss you! Especially you, Robb Stark.

New Recipe: Tomato Soup and Grilled Cheese

I’ve recently become aware that my childhood, while very nice and seemingly normal in many ways, is not dotted with classic children staple foods.  I almost don’t want to write this because people seriously look at me like I’m a freak of nature but I’ve NEVER had a PB&J sandwich.

You can close your mouth now. Yes, yes…its true. Let’s all get over the shock.

Recently my friends discovered this and are on a PB&J crusade for me. I’m assuming there are a lot more food staples I didn’t regularly eat when I was a kid and I blame 1- my hispanic upbringing: rice and beans were our PB&J and 2- my picky-ness. I, like a lot of children, was a super picky eater. I didn’t even like pizza.

There’s your open mouth again! Don’t worry, I like pizza now (duh) and a million other things that I didn’t eat as a kid. I feel like that’s normal for a lot of kids. Not all of course but most kids won’t eat certain things and then grow up and love it. I know that happened to me with lots of things.

Anyways, another food staple I’m starting to realize I might have missed out on is the classic Tomato Soup and Grilled Cheese. I know..this is getting ridiculous!

So I had pinned a few recipes of this classic combo and decided it would be a perfect weekend lunch. But since we’re usually out and about on the weekends, I decided to cave and make it for dinner last week.

It’s actually a very easy recipe and the outcome was really delicious.

Here’s the recipe I used from a blog I recently discovered (and now LOVE): Everyday Occasions by Jenny Steffens Hobick.

Tomato Basil Soup
3 cloves of garlic, minced
2 tablespoons of olive oil
2 – 14 oz. cans of crushed tomatoes
1 – 14 oz. can of whole tomatoes
2 cups of stock (chicken or vegetable)
1 tsp of sea salt
1 tsp of sugar
1/2 tsp of fresh ground black pepper
1/4 cup of heavy cream
3 tablespoons of fresh basil, julienned
parmesan cheese
In a saucepan, saute garlic in olive oil on medium heat for 1 minute – being careful not to burn the garlic.  Add the crushed tomatoes.  Add the whole tomatoes one at a time, squeezing them into the pan to break them up.  Add the juice from the whole tomatoes, as well.  Add chicken stock, salt, pepper and sugar.  Cook the soup on medium at a simmer for 10 minutes.
To finish, reduce the heat to low and stir in heavy cream and basil.  Serve topped with parmesan cheese or a grilled cheese sandwich.

Easy right? Here are the steps, Susy Style!

I started with the whole and and crushed tomatoes. I’m thinking about going organic next time.

Over olive oil at medium heat, I put in the crushed tomatoes and the whole tomatoes, squeezing them as Jenny said to break them up.

Added the remaining ingredients and topped with basil.

I was surprised at how easy and most importantly, how quickly this can be done. And that’s as a first timer. After a couple of tries, I should get it down to a science.

Next the Grilled Cheese.  Here is Jenny’s recipe that I used:

The Best Grilled Cheese Sandwich
4 sandwiches
8 slices of Italian Bread
1 cup of extra sharp cheddar cheese, shredded
2/3 cup of provolone cheese, shredded
2/3 cup of swiss cheese, shredded
2 tablespoon of butter
salt & pepper

Divide the bread into 4 stacks of 2 pieces.  butter the tops and bottoms of the sandwiches.  In between the slices, divide up the shredded cheeses.  In a hot skillet – or cast iron pan/griddle works best – grill the sandwiches on medium heat for about 3 minutes on each side until they are brown and the cheese has melted.

Disclaimer: When doing my grocery shopping, I thought I had read Parmesan cheese on the list of ingredients instead of Provolone cheese so I didn’t buy any because I already had Parmesan. I didn’t realize my gaff until it was cooking time so I went ahead and just used the parmesan cheese (instead of provolone) because, really, you can’t go wrong with parmesan cheese anyways.

I had two slices of the sandwich and my husband had 6 (why is life so unfair?!) but I was stuffed anyways. It’s a light meal but its filling, if that makes sense. You can get the recipe links on my Pinterest Board.

I personally thought the tomato soup was going to be less chunky as it still had semi-big pieces of the whole tomatoes, even after having squeezed them to break them up. But like I said, I’ll keep making this from time to time and hopefully introduce it to my future children to live vicariously through their childhood. What do you think? Good plan? Yea, I thought so too.

Mother’s Day Gift Ideas

Hi friends.

So, like, Mother’s Day is coming up this weekend and I have no idea what to buy the mommas in my life.  I’ve gotten them the usual gifts in the past but guess what, flowers die and chocolate gets you fat. Ok, flowers are also beautiful and chocolate tastes oh so  delicious so I guess those aren’t terrible gifts…but let’s try some new ideas this year, shall we?! Together, we can make Mom proud!

I’m trying to put some thought into this year without, of course, going overboard and over budget.

Here are some ideas I’m thinking of. What do you think? Any good?

I know I for one hate taking a chance on expensive products in the hopes they will do what they promise. For $10 a month (including shipping!!) you get a box filled with new goodies to try every month!

They have 3, 6, and 12 month subscriptions. This is a GREAT gift for any lady in your life and even if you go for the 12 months, the $120 you spend will be in $10 increments each month and that doesn’t really hurt so bad.

Seriously, I think I’m might go this route for my Moms.

#2. Massages

This is one I’ve used in the past and it works out so well because really, who doesn’t love massages?! At Massage Envy you can get a 1 hour massage gift certificate including the tip for $50. We all know moms are stressed so a 1 hour massage can really go a long way.

Also be on the look out for Groupon/Living Social, Coup Tessa, etc.., deals in your city. They are always full of massage deals. Spa Finder will also help you find a spa in your area and lists any specials they may have. Score!

#3. Group Coupons

Speaking of Groupon and their friends…these can make AWESOME gifts. You know how sometimes you see something that you’d like to do but you don’t really want to spend YOUR money on it? I’m sure Mom feels the same way! But she’d love to be gifted that parasailing coupon, that city tour, that wine tasting event, that facial and blow dry combo, that brunch/lunch/dinner at a new restaurant, those concert tickets, that festival entrance, that Pilates class and so on and so forth.

#4 A family Photo Session

This has always been an idea of mine that I think my mom would love.  I’ve had a few friends take these pics with their whole family and they always come out SO nice and its such a nice memory to have. You know moms love pictures and especially of their kids & grandkids. I think your moms would LOVE and really appreciate this gift.

#5 The Usual Suspects: Clothes, Jewelry, Shoes and Handbags

As much as I love to give gifts that require thinking outside the box, I love it when people gift me the “usuals” and I’m sure Mom wouldn’t mind either. Here are my top picks:
